Veggie Lentils

VEGGIE LENTILS

INGREDIENTS:

  • 300 g lentils (pardinas)
  • 1 medium size onion
  • 1 big carrot
  • 1 medium size potato
  • 3 garlic cloves
  • 1 medium size tomato
  • 1 leek (only the white part)
  • 1/2 a red pepper
  • 1/2 a green pepper
  • 1 bay (laurel) leave
  • 6 black pepper grains
  • 1 clove grain
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • Water enough to cover the lentils (around 1 litre)    


PREPARATION:


1. To speed up cooking lentils must be soaked in water for several hours.



2. Clean, peel and cut dice onions, potatoes, tomatoes, carrots and peppers.



3. In the pot you are going to cook, pour in olive oil and stir fry garlic cloves.



4. Add onions and stir fry until golden (2-3 minutes).

5. Add veggies and stir fry.

6. Add lentils and pour in water until covering everything.

7. Add salt, black pepper grains, bay leave and a clove grain.

8. Cover with the lid and cook in medium-slow heat for 20-30 minutes.
